Red Squid Croquettes with Leek Sauce

Ingredients

Croquetas de Chipirón a la Tinta Frinca / Prielá 4 Units
Leek 1 Unit
Butter  20g
Liquid cream 50ml
Salt  
Pepper  

Preparation

· Prepare the leek sauce: wash and cut the leek. Poach in the butter until soft. Add the cream and let it reduce. The sauce should be very thick.

 

· Fry the squid croquettes in Prielá / Frinca ink.

 

· Place one tablespoon of leek sauce per croquette on the bottom of a plate.

 

· Place the croquettes. Decorate with edible flowers.
