Mushroom croquette (La del Bosque - Gastrobar) with foie and kikos mousse

Ingredients

Croqueta de setas (La del Bosque – Gastrobar) 2 Units
Bloc de foie gras 4g
Chives 1g
Kikos 1g

Preparation

- Temper the foie mousse.

- Crush the kikos and chop the chives.

- Fry the croquettes.

- Serve the croquettes on a plate and place a tip of foie mousse on each one.

- Sprinkle the chopped kikos and decorate with the chives.
