Mushroom Croquettes with Mushroom Duxelle

Ingredients

Mushroom croquette Prielá / Frinca 3 Units
Garlic 1/2 Unit
Mushrooms, frozen 120g
Vegetable broth 250ml
Shallot 1 Unit
Mushrooms 100g
Straw potatoes  
Vinotinto  
Oil and salt  

Preparation

- Prepare the mushroom cream: brown the garlic and add the mushrooms. Sauté with the broth and let it cook. Blend.

- To make the mushroom duxelle: brown the shallot and add the mushrooms. Let the water evaporate completely. Add a dash of red wine, let it reduce until it becomes a paste.

- Fry the Frinca / Prielá Mushroom Croquettes.

- Arrange the mushroom cream in the bottom of a deep dish. Place the croquettes on top.

- Decorate each croquette with a spoonful of duxelle.

- Arrange a few straw potatoes on top as decoration.
