Cod Brandade Croquettes with Cream of Truffled Potato Cream

Ingredients

Prielá Cod Brandade Croquette / Frinca 4 Units
Violet potato 1 Unit
Poultry broth 60ml
Skimmed milk 60ml
Liquid cream 35ml
Butter 7g
Black truffle  
Salt and pepper  

Preparation

· Prepare the potato cream: fry the potato in the butter. Add the truffle and the broth. Cook for 15 min.

 

· Add the milk and reduce by half. Blend everything with the mixer, add the liquid cream and mix.

 

· Make potato chips with half of the remaining potato.

 

· Fry the Cod Brandade Croquettes Frinca / Prielá.

 

· Place a spoonful of potato cream under each croquette.   


· Decorate the croquettes with the potato chips.
