Tuna and Piquillo Croquettes with Mojo Mayonnaise

Ingredients

Tuna and Piquillo Pepper Croquette Frinca / Prielá 5 Units
Garlic 15g
Paprika 5g
Cumin 3g
Sherry vinegar 5g
Chorizo bell pepper 20g
Oil 80g
Water 10g
Mayonnaise 100ml
Green olive 3 Units
Chopped tomato 20g

Preparation


· Prepare the mojo mayonnaise: crush the garlic, paprika, cumin, vinegar, chorizo bell pepper, oil and water. To obtain a texture like a paste. Add to the mayonnaise.

 

· Fry the Prielá / Frinca Tuna and Piquillo Pepper croquettes.

 

· Arrange the mojo mayonnaise on the bottom of the plate. Place the croquettes on top.

 

· Garnish with the olives cut into rings and the chopped tomato.
