Ingredients

Cod croquette (La Islandesa - Gastrobar)     2 Unidades
Leek 60g
Butter 20g
Aioli 20g
Cod skin rind     10g

Preparation

- Chop the leek and confit in butter.

- Fry the croquettes.

- Place the leek confit on the base of the plate.

- Arrange the croquettes on top with a tip of aioli and on top of this, a crust of cod skin.
