Cheese rings with caramelized pear compote and fermented red cabbage

Ingredients

Cheese Rings 6 Units
Red cabbage 40g
Vinegar 15g
Pear 1/2 Units
Sugar 30g
Butter 20g
Salt  
Fresh red chili pepper  

Preparation

· Add 20 grams of butter in the saucepan and let it melt.

· Add the half pear in cubes, together with the freshly chopped red chili pepper.

· Add the 30 grams of sugar and a little water.

· Let it cook until it becomes a homogeneous mass.

· In a separate bowl, mix the red cabbage with a little salt and vinegar.

· Fry the cheese rings.

· Finally, plate the cheese rings together with the red cabbage and the pear sauce.
