Andalusian style rings with peas and lime parmentier

This recipe for Andalusian style rings is a perfect combination of flavors and textures, ideal to enjoy as a starter or main dish on any occasion.

Ingredients

Squid rings 135g
Peas 60g
Potato 28g
Salt 3,5g
Lima 20g
Butter  12,5g
Water 100ml

Preparation

· Add 3,5g of salt in a saucepan with water.

· Add the 28g of potatoes cut into square cubes into the saucepan with the water.

· Once the water is boiling, add the 60g of peas.

· Once cooked, remove the water from the saucepan and mash the peas with the potato until a parmentier is obtained.

· Next, mix the 12.5g of butter with the pea parmentier.

· Next, boil the squid rings in the saucepan with oil.
 
· Finally, plate the squid rings together with the pea parmentier and add a slice of lime.
